After processing, the beans undergo a meticulous selection to ensure zero defects, as even a single imperfect Arabica coffee bean can compromise the aroma of our blend. We preserve and enhance the aromas through our patented pressurized cans, a preservation system patented by illy in 1934, in which the air in the tin is replaced by an inert gas at a pressure greater than that of the atmosphere, maintaining the freshness and enhancing the aroma of our coffee.
